TRI-L Mandarin Salsa

INGREDIENTS

  • 8 Medium to Large fresh tomatoes
  • 4-6 cloves of garlic to taste
  • 1 1/2 sliced white onion
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup Tri-L mandarin juice (or 3 peeled segmented mandarins)
  • 1 tsp rock salt your preference
  • 1   tsp chili powder
  • 1   tsp cumin powder
  • 2     Tbl fresh lime juice (can substitute concentrate)
  • 1     can green chilies to taste (mild,Med,Hot) or (use fresh seeded jalapeņo's)
  • 1/4 cup olive oil
DIRECTIONS

Wash and cut tomatoes and onions in half. Add garlic cloves,  about 1/4 cup olive oil, mix together in a 9X11 baking dish, put in broiler for 5-10 min. on high (just until the tomatoes start to sizzle and skin looks a bit charred). Let cool. (Do not peel tomatoes) Blend together the mandarins, onions, garlic, chilies, and cilantro add tomatoes last with salt, lime juice, cumin and chili powder, continue to blend on low about 3 seconds to the consistency you wish, not too much or you will end up with soup.

Serve with tortilla chips, over eggs, or dab on slices of French baguette’s, with shredded mozzarella cheese toasted

Mandarin Cake
PREP TIME  30 Min
COOK TIME  1 Hr
READY IN  2 Hrs

INGREDIENTS

  • 1 (18.25 ounce) package yellow cake mix
  • 4 eggs
  • 1 cup vegetable oil
  • 3 fresh, small mandarin oranges peeled/segmented
  • 1 (8 ounce) container frozen whipped topping, thawed
  • 1 (20 ounce) can crushed pineapple with juice
  • 1 (3.5 ounce) package instant vanilla pudding mix
DIRECTIONS
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  2. In a large bowl, combine cake mix, eggs, oil and mandarin oranges with juice. Beat until smooth. Pour batter into prepared pan.
  3. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
  4. To make the topping: In a large bowl, beat together whipped topping, pineapple with juice and dry pudding mix until blended. Spread on cake.
  5. Top your cake with fresh segmented mandarins to garnish.

 


Festive Holiday Salad

INGREDIENTS

  • 3 cups diced cooked chicken
  • 1 cup diced celery
  • 2 tablespoons lemon juice
  • 1 tablespoon finely chopped onion
  • 3/4 cup mayonnaise
  • 3 mandarin oranges peeled/ segmented  
  • 1 cup seedless grapes, halved or 1/2 cup dried cranberries
  • 1 teaspoon lemon pepper
  • 1/2 cup chopped pecans (or sliced almonds), toasted

DIRECTIONS

  1. In a medium bowl, combine first eight ingredients; mix well. Cover and chill for 1-2 hours. Fold in nuts of your choicejust before serving.
